I love dandelions! It love them so much, I make so many recipes with them. I love the bitter taste, but not many people do. Luckily, I have formulated a recipe for you to enjoy these leaves and take advantage of the many benefits it holds! The sweet, bitter, and salty flavors are addicting!
1 batch of dandelion leaves, cleaned and chopped (These get super dirty, so have to be cleaned. I soak in apple cider vinegar, lemon, and baking soda for an hour and rinse, rinse, rinse!)
2 chopped bell peppers
1 bottle of olives, drained
1 bag of shredded carrots
1 bunch red radishes or diakon, cleaned and chopped
1 bottle of sun dried tomatoes (or real tomatoes), chopped
2 stalks of chopped celery
1 bag of purple cabbage
1 apple, chopped
Put all the ingredients together and enjoy! It goes great with any dressing you’d like! Goes great with fruit dressing or vinaigrette of your choosing!
